The making
The production of Persian Osietra caviar is the result of a long and meticulous process. Acipenser Persicus sturgeons, a very rare species in the wild, are raised exclusively in our protected environments, where we observe rigorous sustainability and conservation standards. The maturation time of the roe can be as long as 12-15 years, during which it develops the refined flavor that makes Persian Osietra caviar a true excellence. Only after careful hand-selection, the roe with hues ranging from bronze to gold, are harvested to offer a product of the highest quality.
