Eco-Sustainability of Farmed Caviar

Sturgeon is currently listed among the endangered species protected under the Washington Convention. Its breeding and international trade are strictly regulated by CITES (Convention on International Trade in Endangered Species of Wild Fauna and Flora), ensuring the safeguarding of wild populations worldwide.
The most critical phase in producing exceptional caviar is the growth of the fish. During this stage, respect for the species’ natural balance is essential, and the environment in which the sturgeons live must closely replicate their natural habitat. Responsible farming therefore plays a vital role—not only in producing high-quality caviar, but also in preserving the species and supporting the repopulation of rivers where native sturgeon once thrived and later disappeared.
Caviar Giaveri breeds ten different sturgeon species, making it currently the most diverse sturgeon farm in the world. The farm extends over more than 15 hectares and includes over 100 tanks designed to accommodate this extraordinary variety of species: Acipenser gueldenstaedtii (Russian Sturgeon), Acipenser baerii (Siberian Sturgeon), Acipenser stellatus (Starry Sturgeon), Acipenser transmontanus (White Sturgeon), Acipenser persicus (Persian Sturgeon), Acipenser ruthenus (Sterlet Sturgeon), Acipenser ruthenus albino (Albino Sterlet), Huso huso × Acipenser baerii (Beluga × Siberian hybrid), Huso huso × Acipenser naccarii (Beluga × Adriatic hybrid), and Huso huso (Beluga).

Caviar Giaveri is a sustaining member of the World Sturgeon Conservation Society, an international scientific association dedicated to preserving sturgeon populations worldwide. The Society promotes research, organizes workshops and conferences, fosters collaboration between scientists and policymakers, and raises public awareness about sturgeon conservation.
For more than 30 years, Caviar Giaveri has also been a member of API – Associazione Piscicoltori Italiani (Italian Fish Farmers Association). Founded in 1964, API represents the leading professional body for Italian aquaculture. It works to protect, develop, and strengthen fish farming activities in inland, marine, and brackish waters, promoting initiatives across economic, scientific, technical, legal, and professional fields.
Environmental responsibility has always been central to the company’s philosophy. Continuous efforts are made to reduce environmental impact through energy and water conservation, including the use of certified electricity from renewable sources—an important commitment to the planet and future generations.
Guided by strong sustainability principles, Caviar Giaveri operates as a fully “green” company. Its activities are carried out with rigorous respect for nature and careful attention to the integrity of the surrounding ecosystem. From the founder’s original vision to today’s practices, the farm utilizes water flowing directly within the property to guarantee both the well-being of the sturgeon and the exceptional organoleptic quality of its caviar.
Through modern aquaculture technologies, the farm ensures sustainable facilities while preserving the beauty and biological integrity of the sturgeon—allowing each specimen to live in conditions that closely mirror life in the wild.
