Caviar Giaveri is the expression of more than forty years of dedication to authentic excellence in fish farming — a commitment deeply rooted in Italy’s rich gastronomic heritage.

From this passion came the decision to produce caviar exclusively in company-owned, protected, and carefully controlled fish farms. Here, the natural balance of each species is respected, and sturgeons are raised in conditions that closely resemble their natural habitat. At the same time, modern aquaculture technologies ensure environmental sustainability and safeguard this extraordinary and ancient species.

The pursuit of uncompromising quality also led to the choice to oversee both production and packaging in-house, inspired by the refined techniques of traditional Russian caviar craftsmanship.

Salting is carried out using the classic malossol method — meaning “little salt” — to preserve the purity of flavor. Each roe is meticulously selected by hand, and packaging is performed with the same care in a strictly controlled environment. This detailed, almost ritualistic process is passed down to maintain consistent standards of excellence over time.
